Tiffin Room: Flavours of Rajasthan Special Menu

Tiffin Room of Raffles Hotel Singapore will be launching the Flavours of Rajasthan special menu available exclusively from 13 to 27 Jan 2022!


Drawing on award-winning Chef Kuldeep Negi’s personal travels to Rajasthan, this limited-time menu is crafted from simple ingredients such as milk, yogurt, lentils, and chickpeas, yet elevated by a cooking style that imparts beautiful smoky notes and lashings of spice for a combination of robust and unforgettable flavours.

Kanji Vada; Deep-fried yellow lentil dumplings with mustard and asafoetida water

Maas Ke Sooley; Lamb fillet with basil and dried mango
 
Presented in their signature Tiffin Box with Bajre Ki Roti and Methi Parantha


Murgh Mokul; Chicken breast cooked with yogurt, almond paste and ground mace

Banjara Gosht; Lamb chop with onions, coriander seeds and cardamon

Macchi Pudhina Curry; Barramundi with mint and fresh coriander paste

Gatta Pulao; Indian Basmati rice with gram flour dumplings and yogurt

Dal Batti Churma; Yellow lentil curry with wheat dough balls and ghee

The Flavours of Rajasthan Menu will be available for lunch and dinner in both non-vegetarian (S$88++ per guest) and vegetarian (S$78++ per guest) options.

Complementary wine pairings (S$58++) are available for both non-vegetarian and vegetarian options.
