with Uni and Caviar ($26.00++) Fresh & Sweet Botan Ebi and Gambero Rosso
prawns with pops of Ikura and crunchy watercress, lemon dressing and citrus
fruits, top off with Uni and Caviar. My favourite!
Iconic Gary’s Garden Salad ($26.00++) Inspired by Singapore’s
beautify city skyline of a “City in Nature”, a combination of freshest seasonal
vegetables, US Asparagus, and Heirloom Carrots planted in the group of mashed
potato, sprinkle with Truffle Snow, Olive Oil Caviar and seaonsal Truffle
shavings.
Signature Seafood Paste ($28.00++) Homemade Tagliolini coated
with housemade seafood stock of lobster and prawns which is slow cooked for
over 2 hours. Each plate is studded with mussels, clams, lobster, and baby
cuttlefish.
Scottish Bamboo Clam ($36.00++) Large and Juicy 10-12-inch
Scottish Bamboo Clams with Moreish Squid Ink Pasta that is tossed with a fragrant
and garlicky sauce using pasta imported directly from Italy.
Iberico Pork Jowl ($38.00++) Marinated for 24 hours, the
Iberian Pig is grilled to perfection, accompany with carrot puree and pistachio
nuts.
Grass-fed Tenderloin ($42.00++) 150-days grass fed Australian
tenderloin, chargrilled and served with potato cake, endives, roasted mushrooms,
and Dijon mustard and finished with veal juice reduced with red wine.
