Hatsu | NEW Modern Edomae Sushi Omakase Concept Helmed by Champion of the World Sushi Cup Japan 2019

Hatsu, a NEW modern Edomae Sushi Omakase concept has open at Hotel Royal Newton on 18 July 2022. The 20-seater sushi restaurant is helmed by Chef-owner Leon Yap, Champion of the World Sushi Cup Japan 2019. Serving only the best seasonal ingredients from Japan, Hatsu’s Omakase courses range from $60.00 to $120.00 for lunch and $128.00 to $250.00 for dinner.


The name Hatsu is inspired by the Kanji “初”, which means the beginning. Taking a deeper look at the Kanji “初”, you can find “心” nestled in the middle. Joining both will result in “初心” or Sho-Shin, which reflects Leon’s very own philosophy, a constant reminder to himself when he first started his culinary journey – to serve wholehearted food and provide the heartiest service to every guest.
