Dec 2021 Pacific Northwest Seafood will be showcased in ten restaurants that
span a variety of cuisines over this period, allowing diners the priceless
opportunity of experiencing the best catch – Pacific Dover Sole, Black Cod and
Pacific Rockfish – in well-executed menus that best bring out the intrinsic
flavours of these prized fish.

Dec 2021 to enjoy this Oven Baked Honey Soya Glazed Black Cod with Ginger Snow
Egg White & Vinegar Reduction ($38.00++). Blessed with a melt-in-the-mouth
texture, the Black Cod is also often called butterfish. Its large white flakes
make it a wholesome, meaty fish that is excellent for baking sautéing,
broiling, grilling, steaming and poaching. It is also very high in Omega-3
fatty acids, vitamins B6 and B12, iron and magnesium.
Another highlight is the Grilled Rockfish, Pan Seared
Carrot Cake, XO Haricot Beans, Mango Compote with Truffle Mushroom Sauce
($38.00++). With its delicate, nutty flavour and medium-fine texture, the Rockfish is best enjoyed baked, sautéed, broiled, deep-fried, steamed, cured or raw. It is an excellent source of lean protein, and is very high in selenium, vitamin D and potassium.
