World Meat Series 2022 | Bedrock Bar & Grill Presents Satsuma Gyu x First Drop Wine

The World Meat Series showcases the finest cuts of premium and lesser-known meats from around the world. Into its sixth year of succession, the first edition of the 2022 World Meat Series features the Satsuma Gyu 4% Miracle Beef by Japanese producer, Kamichiku Group.



Satsuma Gyu ensures in only 4,000 qualifying head of cattle each year of Wagyu grade 4 and above. Amongst the shortlisted cattle, only 4% has over 80% of fat to reach a perfect marbling score of 10 and above. This gives you an idea how rare this is.

The 5-Course Dinner Tasting Menu ($168++ per person) is only available from Sundays to Thursday, till 31 Mar 2022 with wine pairings (First Drop Wines) offered as a top-up option at $88++ per person. Selected dishes on the tasting menu are available daily as à la carte specials from $38++.


Beef Tartare ($38.00++) Buttery and flavoursome, hand-chopped Ribeye cap beef tartare is topped with confit egg yolk, thin strips of nashi pear, fried garlic, white seasame seeds and finely chopped chives. Served with a side of croutons. Available for dine-in only.


Boneless Wagyu Chuck Rib ($78.00++) a succulent cut of chuck ribs slow-cooked in the oven for 72 hours till its tender, served with burnt onion purée, semi-dried cherry tomatoes, pickled Japanese daikon, pickled julienne cucumber and chives, drizzle of beef jus, and garnish of micro herbs. Available for dine-in and takeaway.


Wagyu Ribeye Sando ($68.00++) The sando is assembled with the Applewood-fire grilled ribeye sandwiched between buttered white bread toast spread with black garlic mayo sauce. Available for dine-in and takeaway.

200g of Woodfire Grilled Wagyu Striploin ($148.00++) Tender & Juicy Woodfire grilled Wagyu striploin is served with kizami wasabi and thick cut fries tossed in a ‘shichimi’ seven-spice powder. Available for dine-in and takeaway.


Nama Chocolate (Only available as part of the 5-CourseTasting Menu) The ganache is cloaked in cacao nibs and toasted hazelnut shavings, sitting on a base of raspberry reduction.
